Ingredients:

  • 3 cups egg noodles (measured dry, approximately 6 ounces)
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 ribs celery, diced
  • 2/3 cup frozen peas, thawed
  • 6 ounces canned tuna, drained
  • 10 ½ ounces condensed cream of mushroom soup
  • 1/3 cup milk
  • 1 ½ cups shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup panko bread crumbs
  • 1 tablespoon melted butter

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 2-quart casserole dish and set aside.
  2. Cook the Pasta:
    • Cook the egg noodles according to the package instructions until al dente. Drain and set aside.
  3. Prepare the Vegetables:
    • In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and sauté until the onion is translucent and the celery is tender.
  4. Combine Ingredients:
    • In a large bowl, combine the cooked noodles, sautéed onion and celery, peas, tuna, cream of mushroom soup, milk, and 1 cup of shredded cheddar cheese. Mix well.
  5. Assemble the Casserole:
    • Pour the mixture into the prepared casserole dish. Sprinkle the remaining cheddar cheese on top.
  6. Prepare the Topping:
    • In a small bowl, mix the panko bread crumbs with the melted butter. Sprinkle this mixture evenly over the top of the casserole.
