Ingredients:

  • 1 whole chicken, cut into pieces
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup water
  • 1 bay leaf
  • 1 teaspoon black peppercorns
  • 3 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 tablespoon olive oil

Instructions:

  1. Marinate: In a large bowl, combine the soy sauce, vinegar, water, bay leaf, black peppercorns, garlic, and brown sugar. Add the chicken pieces and toss to coat evenly. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.
  2. Cook: Heat olive oil in a large skillet over medium-high heat. Remove the chicken from the marinade and discard the bay leaf and peppercorns. Add the chicken to the skillet and cook until browned on all sides.
  3. Simmer: Pour the marinade into the skillet and bring to a simmer. Reduce heat to low and cover. Cook for 20-25 minutes, or until the chicken is tender and the sauce has thickened.
  4. Serve: Remove from heat and let cool slightly. Serve hot with steamed rice or your favorite side dish.
