Ingredients:

  • For the Casserole:
    • 1 pound breakfast sausage
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 8 large eggs
    • 2 cups milk
    • 1 cup shredded cheddar cheese
    • 1 cup shredded mozzarella cheese
    • 1 cup diced red bell pepper
    • 1 cup diced green bell pepper
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon paprika (optional)
    • 1/4 cup chopped fresh parsley (optional)
    • 6 cups cubed bread (French or Italian)
  • For the Topping:
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup chopped green onions (optional)

Instructions:

  1. Cook the Sausage: In a large skillet, cook the breakfast sausage over medium heat until browned. Add the chopped onion and minced garlic, cooking until the onion is translucent. Drain any excess fat.
  2. Prepare the Egg Mixture: In a large bowl, whisk the eggs and milk until well combined. Stir in the shredded cheddar cheese, shredded mozzarella cheese, diced red and green bell peppers, salt, black pepper, and paprika if using.
  3. Combine Ingredients: Add the cooked sausage mixture and cubed bread to the egg mixture. Stir until everything is evenly distributed.
  4. Transfer to Baking Dish: Pour the mixture into a greased 9×13-inch baking dish, spreading it out evenly.
  5. Refrigerate Overnight: Cover the dish with plastic wrap and refrigerate overnight to allow the flavors to meld and the bread to absorb the egg mixture.
  6. Preheat the Oven: Preheat your oven to 350°F (175°C).
  7. Add the Topping: Remove the casserole from the refrigerator and discard the plastic wrap. Sprinkle the remaining shredded cheddar cheese over the top of the casserole. If desired, add the chopped green onions for extra flavor and color.
  8. Bake: Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden brown.
  9. Serve: Allow the casserole to cool slightly before slicing and serving. Garnish with chopped fresh parsley if desired. Enjoy!
