Ingredients:

  • 1 pound beef sirloin, thinly sliced
  • 3 cups cooked rice (preferably day-old)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 eggs, beaten
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. Marinate the Beef: In a bowl, combine the beef with 1 tablespoon of soy sauce and 1 teaspoon of sesame oil. Let it marinate for at least 15 minutes.
  2. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the beef and cook until browned and cooked through about 3-4 minutes. Remove the beef from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add the remaining vegetable oil. Add the onion and garlic, and cook until fragrant and softened, about 2 minutes. Add the frozen peas and carrots, and cook for another 3-4 minutes.
  4. Scramble the Eggs: Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
  5. Add the Rice: Add the cooked rice to the skillet, breaking up any clumps. Stir in the remaining soy sauce, oyster sauce, and sesame oil. Cook for about 5 minutes, stirring frequently, until the rice is heated through and slightly crispy.
  6. Combine and Serve: Return the cooked beef to the skillet and mix everything. Season with salt and pepper to taste. Garnish with chopped green onions and serve hot.
