Tasting 2025: 5 concepts I can’t wait to try

We are looking ahead, Orlando, to a little of what 2025 has in store for our food scene. New concepts from proven movers and shakers. New-for-us chain offerings are landing here from foreign shores. And, exclusively announced here, a brand-new food truck from the folks whose medium-rare burger captivated fans of Orlando Meats and whose hand-pulled, chili crisp-laden Biang Biang noods fly off the Red Panda Noodle no matter where it parks.

Baba Yaga, a small 12-by-7-foot trailer, says chef Eliot Hillis, will offer what he and his team are audaciously projecting will be the city’s best fried chicken sandwich.

“Everything we do is the best of everything,” Hillis said.

Enchanting is a word one might not use for a chicken sandwich (Hillis would), but there may have been something supernatural afoot as the Red Panda Noodle team’s natural flow of conversation led to the magical name of their upcoming concept.
