“The salt just gives your mouth something else, a different dimension of taste,” says Jamila Muhammad. “There’s the sweet and the salty, and then the smoke, which kind of hits that umami flavor. There are a lot of different notes.”
It’s one of the reasons that Muhammad, pastry chef and owner of Mila’s Front Porch in Oviedo, believes her bourbon pecan pie earned its blue ribbon at the 2025 National Pie Championships last week at the Embassy Suites by Hilton Orlando Lake Buena Vista. And in an all-new category: the Rebel Pie.
