Little Miss BBQ Founders Working on New Concept

After having to change plans last year following inflation, the owners of Little Miss BBQ are opening a new concept called Full Speed Chicken and Ribs in downtown Phoenix at 511 E Roosevelt St.

Last year, co-owners Scott and Bekke Holmes announced plans to open Little Miss BBQ’s third location in the former Honey Bear’s BBQ building in midtown Phoenix. The project was deemed unfeasible due to swelling costs, and the couple pivoted by leasing a space on Roosevelt Row, but few details were known as to what the couple would do with the space. Now it’s been revealed that they will open Full Speed Chicken and Ribs, according to Devour Phoenix .

The new concept will sit in a 1,700-square-foot space that was the former home of Trapp Haus BBQ, which closed last summer. The Holmeses recently applied for a liquor license for Full Speed Chicken and Ribs, and the new restaurant is expected to open in March 2024 . The new chicken and ribs concept will have some big shoes to fill, as Chef Phil Johnson’s Trapp House BBQ was voted best wings in Downtown Phoenix.
