PORTLAND, Ore. (KOIN) – Heat, time, and good ingredients: that’s what makes a good pizza. The owner of Yum’s of PDX in Southeast Portland puts a lot of thought into each.
The pizzeria, led by Miriam Weiskind, is known for its neo-Neopolitan and Sicilian pizzas with an oven specially ordered from Naples, Italy.

“Our thermometer’s actually broken, so I bake every pizza and I have to do it purely on intuition,” Weiskind said. “I have to constantly manage the fire and bake all the pizzas… But it’s like, you know, you’ve got 30 seconds to stretch, top, get it in the oven. When we’re really busy, you’re doing four pies every two minutes.”…
