Portland spinoff to one of Seattle’s best bakeries adds new name, croissants, sourdough rye

If there was one thing stopping the 2025 expansion of one of Seattle’s best bakeries from being the biggest thing to happen to Portland baking since sliced bread, it was this: no croissants.

Ok, two things, since Sea Wolf Bakers co-founder Jesse Schumann’s solo act in Northeast Portland didn’t feature bread, either.

That will change next month, when Woodblock Bakery changes its name (to Shorebird Bakery), moves farther northeast (into Oakshire Brewing’s Portland Beer Hall) and adds two of the items Sea Wolf Bakers is best known for…
