Good morning friends. Over this past week, I decided to challenge myself to eat avocado every single day for a full work week. I completed this challenge in an attempt to add a wider variety of meals to my diet while staying within my grocery budget. I have found that it’s easier for me to stay under budget when I reuse ingredients for multiple meals throughout the week, and that’s exactly what I did with this avocado challenge.
