KOLO Cooks: Pineapple diablo shrimp

RENO, Nev. (KOLO) – Reno Recipes’ chefs Jonathan Chapin and Daryl Butterfield show us how to make pineapple Diablo shrimp for the final KOLO Cooks of 2025.

Ingredients:

  • 1 lb. shrimp
  • 1 yellow onion chopped
  • 1 tomato chopped
  • 3 cloves garlic chopped
  • 1 pineapple chopped
  • Roasted Guajillo peppers
  • Chili oil
  • 1 stick butter
  • Salt and pepper
  • 1/4 cup apple cider vinegar

Directions:

  1. In a blender, or using an emulsifier, blend roasted chilis, garlic, pineapple, tomato, vinegar (leaving some chunks) Get pan hot with oil.
  2. Add shrimp then sauce and pineapple chunks.
  3. Eat to your hearts desire.
