Sabrina here. I recently checked out Chimbo Sandwich Shoppe, which opened last month the old 8 ½ spot in Church Hill.
Why it matters: I know that “Chimbo” is a nod to Chimborazo, but I’m laughing because it also means “cheap” in Spanish — and my sandwich was $18 with tax.
