“A cafe with a different style” is how The Little Mule Cafe owner Jasmine Aguirre describes her latest restaurant venture. The Little Mule Cafe opened this past April in the Penhook area and has kicked off to a strong start in its first few months.
Serving up breakfast burritos and lunch items including burgers, sandwiches, soups, salads, various sides, as well as a selection of coffees and teas, Aguirre said her cafe is named in part for her specialty sandwich, ‘The Mule’, which is “a Mexican style French dip style sandwich with beef that’s slow cooked for 6-8 hours.” “It comes on a bun with meat and cheese and served with consume dip, which is our style of an au jus,” noted Aguirre. “It’s not super spicy, but it’s very flavorful.”
On the coffee, tea and specialty drinks side, Aguirre said The Little Mule Cafe is the first coffee house in the Penhook area and offers more than 15 selections. “I’m known for the ‘Mexican Mocha’ and the ‘Honey, I’m Fishing’, which is expresso, milk, brown sugar, cinnamon and local honey,” she said…
