ROCKFORD — For chef Scott Carlson, the dishes created at The Raven are seeped in nostalgia with tastes tied to his experiences from years gone by.
That could range from his fond memories of ending late-night shifts with a plate of chicken and waffles with friends. Or it could be his take on wild boar Bolognese tied to his recollections of visiting Texas as the state grappled with hunting down destructive feral boars.
