Cantina Pedregal in Folsom to close, will transition into Nixtaco

FOLSOM, Calif. — Cantina Pedregal in Folsom, a Mexican restaurant by two Michelin-rated chefs, will close later this month and become a Nixtaco.

The restaurant’s final day of service is April 19, then operators plan to transition into Nixtaco by April’s end, according to co-owner Clay Nutting. Cantina Pedregal opened in July 2024 and will have been open for about nine months at the time of its planned closure.

“This restaurant has meant the world to us,” operators wrote Thursday in a Facebook post. “We poured our hearts and souls into every detail, and we are deeply proud of what we created…While this decision is bittersweet, it also marks an exciting new chapter.”…
