  • 22 (P) Time/Temperature Control for Safety Food is not maintained at 41F, or less. Reference 3-501.16(A)(2) and (B). GREEN SALSA IN ICE BATH WITH A TEMPERATURE OF 48F. EMPLOYEE ADDED MORE ICE AROUND CONTAINER. CORRECTED.
  • 23 (Pf) Food prepared and held in a food establishment for more than 24 hours must be clearly marked to indicate the date or day by which the food must be consumed on the premises, sold, or discarded when held at a temperature of 41F or less for a maximum of 7 days.Reference 3-501.17. TAMALES WITHOUT A DATE IN WALK-IN COOLER. ITEM DISCARDED DURING INSPECTION. CORRECTED.
  • 39 (C) Food shall be protected by contamination by storing it: 1) in a clean, dry location; 2) where it is not exposed to splash, dust or other contamination; 3) at least 6 inches above the floor. Reference 3-305.11. CONTAINER OF RAW MEAT STORED ON THE GROUND IN WALK-IN COOLER. PIC PICKED IT UP DURING INSPECTION. CORRECTED.
  • 44 (Pf) Cleaned and sanitized equipment, utensils, laundered linens, and single-service stored in an unapproved location. Food may not be stored in: toilet rooms. Reference 4-903.12. KNIVES STORED AGAINST THE WALL. ITEMS PLACED IN 3 COMPARTMENT SINK TO BE WASHED, CLEANED, AND SANITIZED. CORRECTED. 44 (C) Equipment/Utensils are not properly Air-Dried after cleaning and sanitizing. After cleaning and sanitizing all equipment and utensils shall be air dried before use. Reference 4-901.11. CONTAINERS STACKED UP WHILE WET. ITEMS REMOVED AND PLACED IN 3 COMPARTMENT SINK TO BE WASHED AND CLEANED AS WELL. CORRECTED.
  • 45 (C) Single-Use Articles are stored incorrectly. Single-Use Articles shall be stored: 1) in a clean and dry location; 2) away or protected from contamination; 3) at least six inches above the floor; 4) covered or inverted.
