  • 8 (P) Food employee contaminated hands and failed to wash hands. Food employee must practice good hygiene by properly washing hands when changing tasks. Reference 2-301.14. EMPLOYEE WENT FROM HANDLING MONEY AT REGISTER TO MAKING SANDWICH ON PREP LINE. DISCUSSED PROPER HANDWASHING STEPS, EMPLOYEE FAILED TO REWASH HANDS BEFORE DONNING GLOVES. DISCUSSED PROPER HANDWASHING PROCEDURES AGAIN AND PROVIDED HANDWASHING. CORRECTED.
  • 16 (P) A chlorine solution shall be 50 -100ppm. Quaternary ammonium sanitizer / EPA approved sanitizer – Maintain concentration indicated on manufacturer’s label. Reference 4-501.114. QUAT SANITIZER BUCKET OBSERVED AT 100 PPM AFTER TEST AND MANAGER TEST. SANITIZER BUCKET REMADE AND TESTED AGAIN AT 200 PPM. CORRECTED.

SEWAGE SMELL IS EMITTING FROM MEN’S RESTROOM, PIC STATES THAT MULTIPLE COMPANIES HAVE SERVICED LOCATION MANY TIMES BUT SMELL REMAINS. 55 (C) Water accumulating on exterior walkways and driving surfaces. Exterior walking and driving surfaces shall be graded to drain. Reference 6-202.19. STAGNANT WATER IS POOLING OUTSIDE BACK DOOR.

Reference 5-202.12 FRONT HAND SINK BY SHAKE MACHINE NOT PROVIDING 85F WATER. PIC STATES THEY ARE WAITING ON MIXING VALVE. NEITHER HAND SINK IN WOMENS RESTROOM IS REACHING 85F AFTER HAVING THE WATER RUN FOR SEVERAL MINUTES.

GROUT IS MISSING IN VARIOUS AREAS OF THE ENTIRE KITCHEN (FRONT TO BACK). 55 (C) Physical facilities shall be maintained in good repair. Reference 6-501.11. TWO TILES BY SODA MACHINE HAVE BEEN REMOVED. GAPS EXIST BEHIND OTHER TILES UNDER SODA MACHINE, DISCUSSED THAT GNATS MAY BE NESTING BEHIND OTHER TILES.
