Local Madison County Public Health Inspections January 12 – 16

The following restaurant inspections were conducted by the Madison County Health Department from January 12 – 16.

Sav-On Liquor and Wine- Collinsville Rd, Collinsville

  • 10 (Pf) Hand washing sinks must be accessible at all times. Reference 5-205.11. HAND SINK IN THE BACK WAS FULL OF EQUIPMENT. ITEMS REMOVED BY PIC. CORRECTED.
  • 48 (Pf) Test kits or other devices are not available to the employees to measure sanitizing solution concentration. Provide a test kit or other measuring device so the employees can measure concentrations and ensure proper sanitization. Reference 4-302.14. NO TEST STRIPS AVAILABLE FOR STAFF. REPETITIVE VIOLATION. FOLLOW UP ON 1/22
  • 55 (C) Base coving was not found on the floor and wall junctures. When cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than 1mm (one thirty-second inch). Reference 6-201.13 (A). 55 (C) Physical facilities shall be cleaned as often as necessary to keep them clean. Reference 6-501.12 (A & B). WALL UNDER 3C SINK NEEDS CLEANING AND BASE COVING.

  • 37 (C) Food storage containers are not labeled. Identify food storage containers with common name of the food. Reference 3-302.12. IDENTIFIED AND LABELED.
  • 38 (C) Exterior door allows access for pests. Exterior doors shall be: 1) self-closing, 2) solid and tight fitting, 3) limited to designed use. Reference 6-202.15. BACK DOOR HAS GAP OPENING.
  • 41 (C) In-use wiping cloths are not stored properly. Cloths used for wiping spills shall be maintained dry. Cloths used to wipe surfaces and equipment shall be held in proper sanitizer solution. Cloths in-use for wiping surfaces in contact with raw animal foods shall be kept separate from cloths used for other purposes. In-use cloths must be laundered daily. Reference 3-304.14. WIPING CLOTHS ON COUNTERS. PLACED CLOTHS IN SANITIZER BUCKET.
  • 43 (C) In-Use Utensils are stored incorrectly. Store in-use utensils: 1) in the food with the handle above the top of the food item; 2) on a clean and sanitized surface; 3) in running water; 4) in a container of hot water maintained at or above 135F. Reference 3-304.12. PLASTIC CUP IN FLOUR. REMOVED PLASTIC CUP. HANDLED PAN USED.
  • 44 (C) Equipment/Utensils are not properly Air-Dried after cleaning and sanitizing. After cleaning and sanitizing all equipment and utensils shall be air dried before use. Reference 4-901.11. DISHES UNSTACKED TO AIR DRY.
  • 51 (C) Establishment does not have minimum requirements for a service sink for cleaning of mops and floor cleaning tools and the disposal of mop water. Provide at least one floor mounted service sink or curbed cleaning facility with a floor drain to allow for proper cleaning and disposal of mop water, and other cleaning waste. Submit proposed plan for installation of sink. Reference 5-203.13.
  • 410 ILCS 625/3.07 Establishment not in compliance with food allergen training.

Dollar General- Collinsville

  • 44 (C) Clean Equipment/Utensils/Linens/Single-Use Articles stored incorrectly. Equipment, Utensils, Linens and Single-Use Articles shall be stored: 1) in a clean and dry location; 2) away or protected from contamination; 3) at least six inches above the floor; 4) covered or inverted. Reference 4-903.11(A), (B) and (D). BOX OF PAPER PLATES STORED ON FLOOR BY SIBACK DOOR. CORRECTED BY PIC.
  • 49 (C) Clean all non-food contact surfaces frequently to prevent soil accumulation. Reference 4-602.13. DISPLAY COOLER THAT HOLDS CARTON OF MILK NEEDS MORE ROUTINE CLEANING.
  • 53 (C) The women’s restroom lacks a covered receptacle for disposal of feminine hygiene products. Provide at least one covered trash receptacle in the women’s restroom. Reference 5-501.17. WOMEN’S RESTROOM DOES NOT HAVE RECEPTACLE WITH LID.
