On Friday, I wrote a bit about Brian and Nikki Podgorski , who are best known for slinging crispy-edged smashburgers as Salsa Collaborative.
They’ve recently changed things up, moving from a tent to a sleek new food truck under the name Burger Daddies. I dove into their story a bit elsewhere, but I didn’t have space to get into the actual burgers, which, put simply, are great.
The patties are served with incredibly crispy edges that give any of their burgers a little char and a lot of texture. Of the couple I’ve had the chance to try, the Magic Mushroom was something a treat. It’s smothered in wild and button mushrooms, Swiss cheese, arugula, and truffle aioli. The latter of those I generally find overpowering even in moderation, but on this burger it was done with restraint, allowing it to be an earthy compliment to the mushrooms.
With all those toppings, it’d be easy for the whole ensemble to become a bit of a soggy, sloppy mess. You’ll definitely want napkins, but the texture of the burger balances it all out into something I plan on ordering again.
