A small army of food trucks is rolling into the Eagan Festival Grounds at 1501 Central Pkwy. next weekend for the Eagan Food Truck Festival.
The annual event, packed with crispy egg rolls, tender-on-the-inside fried chicken, and rich paella, will take place on Friday, Aug. 8, from 4 to 9 p.m.
While the 25-plus food trucks are the stars of the show, there will also be live music from producer and DJ — and Eagan resident — TRIZ, as well as the high-energy cover band PopROCKS.
But even with some family activities and entertainment on the schedule, the food trucks remain at the center of the event. Here are the food trucks that are going to be taking part.
