Beyoncé and Taylor Swift ate his food. Now he has a San Antonio-area food truck

It was a breezy Friday afternoon when I first visited Herencia Cuisine by Chistophe, a bright orange food truck parked in a corner of Johnson City, about 30 miles east of Fredericksburg and about an hour north of San Antonio.

Rumor on the street was that the chef, Christophe Bonnegrace — a renegade cowboy of a Frenchman with a long list of celebrity clients, fans, and friends— ran the food stand four days a week. Each week he builds an entirely new menu, serving hot, ready-to-eat food at the outdoor West Side Streatery, where his food truck is located in the historic Texas Hill Country town.
