With the closing of Green Vegetarian Cuisine this Friday, that’s how many full-on vegetarian and vegan restaurants remain standing in San Antonio. Eight. That’s eight in the broad expanse of a greater metropolitan area with more than 10,000 food-service operations. Eight.
Fragile. That’s the word that comes to mind for the ecosystem of plant-based restaurants that feeds this city. When we checked in 2016, that number wasn’t much bigger.
