Former executive ditched corporate life to run one of the Bay’s best Italian spots for 20 years

For George Noblie, the path to owning one of Silicon Valley’s most beloved Italian restaurants didn’t begin in a kitchen or behind a bar — it began decades earlier, in the quiet corners of a teenage dream. Growing up full-blooded Italian, he always imagined one day opening a place of his own. Life, however, took him through the corporate world first, where he worked his way up to VP of a Customer Services Group, spending years in boardrooms, not dining rooms. But the pull toward hospitality never faded. And in 2005, once his kids were grown, George finally made good on that dream and purchased Vito’s Trattoria.

Since then, Vito’s has grown into one of San Jose’s most respected Italian dining institutions — a family-first restaurant with a reputation for warmth, consistency, and dishes that keep generations of guests returning. George’s son Anthony works alongside him, helping carry the family energy that defines the experience. The name “Vito’s” came with the purchase, but the heart and culture that make it special today are undeniably theirs.
