You can see waiting in line for a cream bun at Stellina Pronto as a huge aggravation, or as an opportunity. Owners Katrina Fried and Christian Caiazzo see the lines snaking out of their tiny bakery as a chance to meet new friends, catch up with neighbors and groove to the daily playlist. Maybe it’s a glass-half-full thing, but no one waiting on busy mornings seems to be grumbling.
Stellina Pronto is Petaluma’s neighborhood bakery, full stop. There is almost always a wait because the pastries, pizza and coffee are worth the queue.
But the full cases of chocolate-filled cornetti, tarts, muffins, kouign-amann and cream puffs that overflow onto the counters — and drive much of the bakery’s revenue — weren’t really the original plan. Caiazzo, a former pizzaiolo at Wolfgang Puck’s Postrio in San Francisco and the owner of Point Reyes’ destination-worthy Stellina Osteria, was more interested in a wood-fired pizzeria with a few pastries and coffee in the morning…
