Shinpaku
Starting at 5 p.m., Thursday, Feb. 5 Thompson Savannah, by Hyatt will have its first ever guest chef residency and pop-up ‘Shinpaku’ with former Husk Chef Chis “Chino” Hatchcock. Hatchcock will be taking over the hotel’s Bar by Fleeting with a menu inspired by Japanese gastro pubs or Izakaya, and locally brewed sake. The pop-ups will be every Monday and Tuesday in February.

- Tybee Salt Bomb Oysters (grilled with nori butter or raw with yuzu)
- Hamachi Sashimi, Black Garlic Ponzu, Shiso
- Aged Beef Tartare, Matsutake Shoyu, Nori, Horseradish, Rice
- Yakitori Chicken Thigh – bourbon barrel teriyaki or SC sea salt
- Ankimo Torchon, Sake, Yuzu
- Charred Savoy Cabbage, Soy Emulsion, Bonito
- 24 Hour Pork Tonkatsu Ramen, Pork Belly, Soft Egg, Braised Greens, Benne, Radish

- Koji-Aged NY Strip, Grilled Maitake Mushroom
Ember Lotus
Ember Lotus, an Asian Fusion Brazilian Steakhouse will start its soft opening this Friday, Feb. 6, according to its Facebook page. The menu offers a buffet, carving or small plate options and features a honey-soy lacquered pork shoulder with a five spice rub, or fall-off-the-bone ribs with a tangy tamarind glaze.
