Juan Zuniga was hopeful. He had been told the Certificate of Occupancy for his “new” El Compadre restaurant would be ready by midmorning Wednesday, but when he showed up at Government Plaza in downtown Shreveport at 10 a.m., it was not.
“I can handle a couple more hours,” he told the staff in the permits and inspections office. “Thanks for being so nice,” MPC Plans Examiner Annie Peck responded.
When he returned at 3:45 p.m., the certificate was waiting for him. Peck smiled as she handed it to him. “Thank you, Miss Annie!” Zuniga said with a wide smile in return.
“I will open at 4:30 or 5 this afternoon. We are ready!”…
