SPOKANE, Wash. — It’s been a busy two months for Spokane Community College’s food pantry. The fall quarter started in mid-September and already resource navigator Dr. Suzanne Phillips is seeing a demand unlike anything in her five years at the school.
“As you can see, we’re pretty empty. This usually is packed full. We’re really empty on proteins right now,” she said, pointing into an industrial freezer with two lone bags of shrimp inside.
