Silence is said to be one of a dish’s biggest compliments. At Dodos at the High Spot, a new modern American cuisine restaurant in Spokane Valley’s Greenacres area, conversation easily fills the intimate space. However, chef Joe Absolor, who opened the eatery with his childhood friend Todd Zyph in early December, notes that his plates can quiet even large, energetic groups.
“One of the coolest things I’ve seen is I had a party here, and there’s 25 people, and it was loud as shit in here, and then all the food went out, and there was like this silence over the restaurant,” Absolor says. “It went really, really quiet for about a minute, and then it got loud again.”
Absolor’s foray into the culinary world started in 2005, when he attended Le Cordon Bleu College of Culinary Arts in Scottsdale, Arizona.
