The circuitous roots of Plunder Rum & Tapas, the new bar from Bryan Harkey in downtown Spokane’s historic Legion Building, can be traced all the way back to the 2013 South American edition of Lollapalooza in Santiago, Chile.
Harkey was working for liquor distributor Young’s Market at the time and says he was traveling with a buddy, “not on official business” but rather to experience the music festival (headlined by Pearl Jam and The Black Keys) and the regional drink culture.
“We went up to Lima and Machu Picchu [Peru] on that same trip,” he recalls. “I loved the rum and tequila and mezcal sours — all that kind of stuff.”…
