SPRINGFIELD, MO – Demolition crews made quick work of a longtime restaurant on the city’s east side. It was the first step in clearing the site for a brand new eatery with a name already familiar to Ozarks.
As of Tuesday afternoon, all that remains of the former Lucy’s Chinese Food E. Sunshine at Lone Pine Avenue is a barren concrete slab. Soon, Chipotle Mexican Grill will begin constructing its third Springfield store on the site.
Back in February, Ozarks First reported the company had applied for several city permits to begin work on the site listed as 2456 E. Sunshine. A Chipotle spokesperson confirmed it was building a new location set to open sometime in the winter of 2025…
