Springfield kitchen put on risk control plan for hand washing

One Springfield kitchen was put on a risk control plan this past week for repeated hand-washing violations and could possibly be put on an additional risk control plan, while another saw an employee stick a bare finger into a cup of pudding, according to the Springfield-Greene County Health Department’s food inspection reports.

A risk control plan is implemented when a place has three of the same priority violations in a row, in an effort to help a restaurant create “a new habit that keeps the food safe and our customers safe,” Eric Marcol, program coordinator for SGCHD’s environmental services division, told the Springfield News-Leader in 2023. A priority violation is one that impacts the safety of the food.

Los Michoacanos Garcias 2, 1779 S. Glenstone Ave., is on a risk control plan due to hand-washing violations during three consecutive routine inspections, according to the March 23 inspection report. The most recent report cited an employee placing raw chicken on the grill with gloved hands, removing their gloves and then putting on new gloves without washing hands. In the next 30 days, the restaurant will have two unannounced compliance checks to ensure they are following the risk control plan…
