Light and Refreshing Orzo Chicken Recipe: One-Pan Delight!

This is one of my favorite meals to make especially in the summer months on those hot summer days. This is a one pan meal and is really simple to make. You will need the following ingredients:

Recipe:

1 – 2 pounds of boneless chicken breast

1/4 cup of flour

1/4 teaspoon of garlic powder

1/4 cup of oil

14.5 oz can of chicken broth

1 cup of water

8 oz of orzo

2 cups of spinach

1/4 cup of onion

2 lemons

5 leaves of fresh basil

salt and pepper to taste

Garnish: Lemon wedges, grated parmesan cheese, and cherry tomatoes

Trim and slice the chicken breast into thin cutlets. Salt and pepper them to your taste on both sides.

Add the flour and garlic powder to a plate and mix well.

Preheat a large skillet to medium high heat.

Place the thin chicken cutlets into the flour and coat all sides.

Add the oil to the pan. When the oil gets hot add the chicken cutlets and cook 8 – 10 minutes or until the internal temperature reaches 165 degrees. Cook time will depend on the thickness of your chicken cutlets.
