Chicken fried rice is one of my favorite chinese recipes to make. This recipe is a really simple version and it is easy to cook as I prepare it all in one skillet. You will need the following ingredients:
Recipe:
1 pound of chicken, diced into bite size pieces
4 cups of cooked jasmine rice
1 medium onion, diced
1 large clove of garlic, minced
1/2 – 1 teaspoon of ginger, grated
4 tablespoons of brown sugar
4 tablespoons of soy sauce
1 teaspoon of rice wine vinegar
1 can of chopped water chestnuts, drained
1 tablespoon of oil
3 green onions, diced
Optional : 4 – 6 eggs
Preheat a large skillet to medium high heat. Add the oil and the diced chicken and cook for about 3 minutes.
Add the garlic and the ginger and cook this until the chicken is cooked through.
In a small measuring cup or bowl, add the rice wine vinegar, soy sauce (I used low sodium) and the brown sugar and stir together until the sugar is dissolved.
