I have always heard of corn chowder but I have never eaten it. It is not a dish that is served around my area and no one I know has ever cooked it, so I decided to read up on a few recipes and make one using the ingredients I had on hand. This recipe was delicious and my family loved it. You will need the following ingredients:
Recipe:
3 – 4 ears of fresh corn (frozen or canned will work in a pinch)
1/2 of an onion, diced
1/2 of a bell pepper, diced
1 qt of chicken broth
1/2 cup of milk
1/2 cup of heavy whipping cream
4 tablespoons of butter
1/4 cup of flour
8 oz of monterery jack cheese, shredded
3 green onions, sliced thinly
salt and pepper to taste
Preheat a large pot to medium heat and add the butter.
After the butter has melted add in the onions and the bell pepper and cook them for about 3 – 5 minutes.
Shuck, silk and wash the corn. Cut the corn from the cobs and add it to the pot. Let this cook for about 3 minutes.
Sprinkle the flour in and cook another 3 minutes or so. You want to cook the raw taste from the flour.
