I saw these silver dollar pancakes at a specialty grocery store the other day and I was ashtonished at the price of them. I came home and decided to make my own as they could not posssibly be that complicated. I used the following ingredients:
Recipe:
1 egg
1 cup of whole milk
1 1/4 cup of self rising flour
1 tablespoon of sugar
2 tablespoons of butter. melted
2 -4 teaspoons of neutral oil
1 teaspoon of vanilla extract
Preheat a large skillet or a griddle on medium heat. You do not want this griddle to hot as the pancakes will burn. You can use a skillet for this too.
In a medium bowl add the milk and the egg and whisk together until they are mixed.
Add in the flour, sugar, vanilla, and the melted butter and whisk just until it comes together. They will still be some lumps in the batter and that is okay as overmixing will cause the pancakes to be tough.
Place a light coating of oil on the pan. Tip: You can use butter, and I do sometimes, but butter will cause the pancakes to become dark as butter turns brown and may burn when heated at high temperatures.
