This is a recipe that I like to make when I need a light and refreshing meal, especially around the holidays after eating all that heavy food. You will need the following ingredients:
Recipe:
1 – 1 1/2 pound of chicken tenders, or chicken cut into bite size pieces
2 tablespoons of butter
1 tablespoon of avocado oil
1 cup of white wine (you can use chicken broth instead)
1/2 cup of onion, diced
2 cloves of garlic, minced
1 cup of heavy whipping cream
1 lemon, juiced
1 tablespoon of fresh basil, diced
1/2 teaspoon of fresh thyme
salt and pepper to taste
1/2 pound of angel hair pasta cooked (or your favorite type)
Heat a large skillet to medium high heat and add the butter and the oil.
Season the chicken tenders with salt and pepper on both sides and then add the chicken to the skillet.
Cook the chicken for 4 minutes on each side or until the internal temperature is 165 degrees and the chicken is cooked through. Remove the chicken from the skillet and place it into bowl or plate and sit aside.
