I bought some blueberries the other day thinking that I needed to make this recipe and share it with my family. This is a really simple recipe to make and a all-time family favorite. You will need the following ingredients:
Recipe:
2 1/4 cups of self-rising flour
1 cup of sugar
1 egg
3/4 cup of milk, you may need a little more to thin the batter some
6 tablespoons of butter, melted
3/4 cup of fresh blueberries
Preheat the waffle iron.
In a medium bowl add the butter, egg, flour, sugar and milk and mix this together until it comes together. You will still have a few lumps and that is okay.
Fold in the blueberries and if the batter is a little thick add a few more tablespoons of milk to the batter. You want it to be like a thick pancake batter.
Spray the waffle iron with non-stick cooking spray and place the batter on the iron. Tip: My waffle maker makes 4 waffles at one time so used a 1/4 cup of batter in each of the four waffle squares.
