Fried potatoes is a recipe that my family enjoys at least once a month. We really enjoy having them with pinto beans and cornbread. It just makes a simple meal. You will need the following ingredients:
Recipe:
5 – 6 russet potatoes
3 tablespoons of vegetable shortening
salt and pepper to taste
Preheat a large skillet to medium heat. You will need a skillet that has a lid for better cooking. I use a non-stick skillet or an iron skillet.
Wash, peel and slice your potatoes into thin circles about 1/8 inch thick. I do this using a sharp knife.
Add the vegetable shortening to the skillet and let it melt and heat up.
Carefully place the sliced potatoes into the oil and season the potatoes with salt and pepper. Place a lid on the skillet and cook for about 3 -5 minutes. You do not have to use a lid but i find that it makes for more even cooking.
Remove the lid and turn the potatoes over and continue cooking them with a lid until the potatoes get fork tender and golden brown.
