My family loves homemade chicken pot pies in the cooler months. It is a hearty meal that comes together quickly. I use a simple recipe for a buttermilk biscuit crust for my topping. You will need the following ingredients:
Recipe:
2 chicken breasts, diced into small pieces
2 carrots, sliced thinly
1 medium onion, diced finely
2 medium russet potatoes, diced small
1 cup of green beans, canned or frozen
1 can of chicken gravy or cream of chicken soup
salt and pepper to taste
Biscuit Dough Recipe:
1 1/2 cups of self- rising flour
4 tablespoons of butter, grated ot diced into small pieces
1 cup of buttermilk (you may need a little more or less)
In a medium saucepan add the chicken breasts, onions, carrots, potatoes, green beans, salt and pepper and cover this mixture with water. Bring this to a boil and boil gently for 20 – 30 minutes or until the chicken is cooked through and the vegetables are done.
Remove this from the heat and stir in the can of chicken gravy. Pour this mixture into a large skillet or a 8 x 10 casserole dish.
