The eyes have it: Oregon now has an official state vegetable – it’s the potato

SALEM, Ore. (KTVZ) — The potato was officially recognized as Oregon’s official vegetable on Monday during an induction ceremony hosted by the Oregon Potato Commission. State Senator Bill Hansell (R-Athena), a co-chief sponsor of SCR 3, was on hand to celebrate the occasion and delivered a speech highlighting the potato’s importance to Oregon.
