Copycat Homemade Australian Tim Tams Cookies

We love world foods and snacks, but even so, my first experience with a Tim Tam cookie wasn’t until I was in my early 20’s with a group of foreign exchange students in my class. Now, they are more available in specialty stores, but super expensive! While this recipe isn’t an exact clone, we can make a close copy of them at home! This is what you’ll need to make 14 knock-off Tim Tams:

For the cookie layers:

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 egg
  • 1/3 cup unsweetened cocoa powder
  • 1 -1 1/4 cup plain flour
  • 1 pinch salt

For the Filling

  • 1/3 cup butter
  • 1 cup powdered sugar
  • 1 Tbsp unsweetened cocoa powder
  • 1/2 Tbsp malted drink powder

For the Coating

  • 1 1/2 cup milk or semi-sweet chocolate chips or melts
  • 2 tsp coconut oil

To Make The Cookies

Cream the butter and sugar together until the mixture becomes pale and fluffy. Scrape down the sides of the bowl, add the egg, and continue mixing until the egg is fully incorporated, and the mixture lightens in color. Sift the cocoa powder, flour, and salt together to remove any lumps, then gently fold the dry ingredients into the butter mixture until thoroughly combined. The dough will be quite soft. Transfer the dough onto a sheet of plastic wrap or a silicone mat, then cover it with another sheet or mat and roll it out to about 1/4 inch thickness (keeping in mind that these will be sandwich cookies). Place the dough on a tray and freeze it for 30 minutes. Once chilled, cut the dough into 28 rectangle pieces and space them on trays, leaving about 1/2″ between them.
