  • 2 cups shredded Mexican blend cheese
  • 10 small corn tortillas, cut into quarters
  • 1 cup sour cream
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Season Beef: Add the taco seasoning to the beef, along with a little water as directed on the seasoning packet. Stir well to combine.
  4. Mix Ingredients: In a large bowl, combine the seasoned beef, black beans, corn, diced tomatoes, and salsa.
  5. Layer Casserole: In a greased 9×13 inch baking dish, spread a layer of the beef mixture. Top with a layer of tortilla quarters, followed by a layer of cheese. Repeat the layers until all ingredients are used, ending with a layer of cheese on top.
