STATEN ISLAND, N.Y.—Egger’s Ice Cream Parlor is giving away free egg creams from 2 to 5 p.m. today in preparation for its third consecutive appearance at the Brooklyn SeltzerFest this Sunday, March 15.
Owner Danielle Raleigh says the Staten Island staple will once again compete in the festival’s egg cream competition and run a booth selling both egg creams and ice cream. But today’s giveaway has a more practical purpose: mastering the use of old‑school seltzer siphons.
Brooklyn Seltzer Works—the last remaining old‑fashioned seltzer bottling operation in New York City and a functioning food museum—supplied the shop with a six‑pack of seltzer in classic siphons, equipment that requires a different technique than what Egger’s typically uses. Rather than waste the practice batches, owner Raleigh decided to share them with customers.
“Brooklyn Seltzer Works bottles their own seltzer, and they gave me a six‑pack in old‑school siphons,” Raleigh said. “I figured, why dump it down the drain? Let’s give people free egg creams and practice at the same time.”…
