Hillsborough County schools use ‘speed-scratch’ approach to keep lunches affordable

TAMPA, Fla. (WFLA) — Battling the costs of rising food prices, school leaders are using a unique approach to keep lunch costs affordable.

A new food menu is underway for Hillsborough County Public School students and will be unveiled this coming September, according to district leaders.

The menu will feature a meatball sub called the “La Segunda Slammer” — one of the new meals made by the “speed-scratch” approach.

“Speed-scratch is where we rely on our business partners to season and cook the proteins for us,” said Hillsborough County Public Schools Executive Chef Deborah Ferguson. “What we do is then we bring them in, and we build recipes from there. So, for example, we make our house-made fried rice, where our cooks will make the rice and cook it in a big skillet and fry it up with eggs and fresh veggies.”…
