USF Forum Highlights How Food Choices Impact Health for Tampa Bay Residents

The Second Annual USF French Business Forum took place in Florida, bringing together experts to discuss the relationship between food, health, policy, and culture. More than 100 participants attended the event. Speakers included French and American professionals in medicine, research, and diplomacy. The main topic was the concept of ‘food as medicine.’ The forum examined how food production, distribution, and consumption affect health and healthcare costs.

A key discussion point was the difference between French and American food systems. Raphaël Trapp, French Consul General in Miami, described his experience moving to the United States. He noted that fresh, healthy foods are often more expensive than processed foods in the U.S. In France, he said, fresh markets are common, even in small towns, making healthy food more accessible. Trapp also mentioned the role of food industry lobbying and marketing in the U.S., which he believes influences the popularity of processed foods.

The forum addressed scientific research on nutrition, including studies on the human microbiome. Hariom Yadav, director of the USF Center for Microbiome Research, discussed how gut microbes affect the body’s response to food.
