PORTLAND, Ore. (KOIN) — About three years ago, Anabel Gutierrez and her partner Ernesto Romero opened Caiman Cafe in downtown Portland. She’s originally from Mexico, he’s from Cuba — and those are the two big influences on their menu.
On the day KOIN 6 News visited, Gutierrez made 3 special sandwiches — one from Cuba, one from Mexico and one that combines both
The Cuban sandwich uses Dos Hermanos bread and “comes with ham and it comes also with Swiss cheese, and it also comes with our shredded pork,” which takes more than 24 hours to cook. One of the really important ingredients, she said, is the mustard.
