A chef with Michelin-starred experience just landed at this boutique Portland hotel

A boutique London hotel brand is taking a novel approach to revitalizing its downtown Portland location — tapping into the Rose City’s deep reserve of culinary talent.

Half a year after The Hoxton hotel brought on the Portland food cart Baon Kainan to run the Filipino restaurant residency Pamana in its Old Town/Chinatown dining room, and just three weeks after announcing that Deadstock Coffee would be reborn inside its lobby cafe, the hotel is bringing on Adán Faus to as its new executive chef.

With experience at Michelin-starred restaurants in New York and California, Fausto is best known locally for his summer pop-ups, including Tacos con Onda — where he sears Norteño-style carne asada tacos — and Mariscos con Onda — his celebration of Mexican seafood.

In his new role at The Hoxton, he will update the menus at both Tope, the hotel’s fourth-floor taco bar, and 2NW5, its basement speakeasy…
