Professor-turned-entrepreneur adds Hispanic twists to brunch staples in Virginia Beach

VIRGINIA BEACH, Va. — By day, Marilyn Castro teaches economics at Tidewater Community College. By brunch, she’s serving up Argentine sausage, Mexican chorizo, and a taste of Puerto Rico at her restaurant inside Lynnhaven Mall.

Castro is the owner of Breakfast Bar Hispanic Fusion, which opened in June 2024 on Mall Drive in Virginia Beach. The restaurant combines traditional brunch staples with flavors and ingredients from Hispanic cultures around the world.
