Chef Elias Taddesse Brings DaBo Burger to Southeast DC

The team behind Mélange has officially introduced DaBo Burger inside the Atlas Bridge District Brewery & Tap Room. Named after the Amharic word for bread, this concept focuses entirely on intention and craft. The milk bun is the true star here, inspired by French brioche and Japanese techniques to create a vessel that is soft, glossy, and built to perform! Each bun undergoes a rigorous three-day process to ensure it holds up perfectly to the deeply seasoned smash burgers.

Free Fries Are a Treat for Early Guests

Guests can choose from a dynamic menu featuring the signature DaBo, Le Royale with butter chive dijonnaise, or the Oklahoma with fried onions. To celebrate the grand opening, the first 25 guests in line on Thursday, January 15, will receive complimentary hand-cut beef tallow fries with their purchase! The menu is designed to evolve seasonally and will soon include boozy milkshakes to pair with award-winning craft beers from Atlas Brew Works.

The building utilizes a unique sustainability system where waste heat from the brewery heats water for the apartments, a feature recently highlighted by Fast Company.
