Guapo’s Cocina & Bar — Merrifield: A Full Restaurant Profile

Where It All Began: A Colombian Family’s American Dream

Long before there was a restaurant, there was a road. Gallows Road, to be precise — the stretch of Northern Virginia where the Rincón family first landed when they arrived from Colombia in the late 1970s. They were immigrants with ambition, four children in tow, and a belief that hard work and good food could build something lasting. Forty-some years later, that belief has been proven spectacularly right.

In 1990, patriarch Hector Rincón opened the first Guapo’s at 4515 Wisconsin Avenue NW in Washington DC’s Tenleytown neighborhood. It became an immediate neighborhood fixture — the kind of place where college students, coworkers, and multigenerational families all crowded in together, drawn by generous portions, a festive atmosphere, and the deep, carefully seasoned flavors that only a family kitchen knows how to produce. The flagship has operated at that same address ever since.

From that single corner restaurant, the Rincón family quietly built one of the DMV’s most beloved Mexican restaurant empires. Today, Guapo’s Cocina & Bar operates eight full-service locations across DC, Maryland, and Virginia, plus a spin-off brand — Guapo’s Go, Taquería & Charcoal Chicken — with outposts in Herndon and Manassas. None of it is franchised. Every location is owned and operated by a Rincón family member. The founders’ children — every one of them a graduate of Fairfax County Public Schools and Virginia universities — now run the day-to-day operation, carrying their parents’ vision into a new generation. And now, their own children are stepping into the kitchen, making it three generations deep.

Coming Home: The Merrifield Story

The Merrifield location, which opened in December 2023, is the newest and most personal chapter in the Guapo’s story. The family didn’t choose this address by accident. Gatehouse Plaza sits just northwest of the Route 50 and Gallows Road intersection — the very community where the Rincóns first made their home in America. Opening here wasn’t just smart business. It was a homecoming…
